The ink is a dark pigment released by some cephalopods, which when expelled creates a dark cloud and serves to disorientate their predators thus constituting an excellent evasion mechanism. The dark color is due to its high melanin content.

For centuries, sepia ink has been considered an exceptional gastronomic ingredient and a healthy natural food, low in fat and of great nutritional value. It is rich in vitamins and minerals, has a high protein content and excellent digestibility. Asian, Greek and Roman cultures even used it as medicine.
